Pastitsio

Yields: 10 Servings Difficulty: Easy

     INGREDIENTS

  1. 750 g ground beef
  2. 1 onion 1 clove(s) of garlic
  3. 1 teaspoon oregano
  4. 4 tablespoon(s) olive oil
  5. 1 tablespoon(s) sugar
  6. 2 tablespoon(s) tomato paste
  7. 100 ml red wine
  8. 400 g canned tomatoes
  9. 1 teaspoon cinnamon 1 bay leave

 

  1. For the béchamel sauce
  2. 100 g butter
  3. 100 g all-purpose flour
  4. 1 liter whole milk salt pepper
  5. 1/2 teaspoon(s) ground nutmeg
  6. 100 g hard cheese, grated
  7. 1 egg

 

  1. For the pasta
  2. 1 package pasta no 3
  3. 30 ml olive oil
  4. pan measurement 45.5 x 37

        INSTRUCTIONS

  • Place a pan over high heat.
  • Add 5 tablespoons of olive oil, the finely chopped onions,
  • 1 tablespoon granulated sugar and oregano
  • Add the garlicand continue to sauté 3 minutes .
  • Add the ground meat.
  • Add the tomato paste and sauté for at least 2 minutes.
  • Add the wine and let the alcohol evaporate.
  • Add the canned tomatoes, cinnamon, sugar,and bay leaves.
  • Turn the heat down to low and simmer for 10-20 minutes,
    until the sauce reduces and the ground meat is cooked.
  • When ready, remove from heat. Discard the bay leaves and set aside until needed.

     Béchamel sauce

  • Heat the butter in a pan medium heat.
  • As soon as it melts add the flour.
  • Beat with a hand whisk and sauté the flour
  • Add the milk, in small batches, whisking continuously so that no lumps form.
  • When ready, remove from heat and add salt, pepper, nutmeg and the grated cheese.
  • To complete, add the egg and whisk to incorporate.

    Pasta

  • Boil the pasta in salted water according to package instructions.
  • Assemble Preheat oven to 180* C
  • Baking pan spread the pasta Sprinkle cheese.
  • Spread the ground beef sauce Sprinkle cheese
  • Spread the Béchamel Last, sprinkle the grated cheese over the top.
  • You can also add some small cubes of butter.
  • Bake for 30-40 minutes or until the béchamel turns golden brown.
